When it comes to guacamole, Angelina Garcia of Carpinteria, two-time winner of the annual California Avocado Festival's Best Guacamole Contest, is the queen of green. She and her daughter, Patricia, vow to be back in 2008. Here are their winning recipes from previous years.
Angelina Garcia’s Mexi Fest Guacamole
Ingredients
10 yellow chilies, diced finely
8 tomatoes, diced
Cilantro, finely cut
3 sweet onions, diced
1/3 cup lemon juice
6-8 avocados, diced
Preparation
Mix together the chilies, tomatoes, cilantro, and onions. Add the lemon juice. Fold in the diced avocados. Makes approximately 1 quart.
Angelina Garcia’s Traditional Guacamole
Ingredients
2 chiles de arbol, fresh
2 serrano peppers, fresh
1 yellow chili, fresh
1 jalapeño chili, fresh
2-3 tomatoes, fresh
1/2 tsp oregano
2 cups cilantro
4 cloves garlic
1 cup diced red onion
1 cup diced green onion
6 large avocados
Preparation
Boil all chilies in water or roast. Boil or roast tomatoes. Blend in blender chilies, tomatoes, oregano, cilantro, and garlic, just until grated up. Add salt to taste. Incorporate diced onions (green and red) and stir. Add cut up avocado to desired thickness and richness.
Patricia Garcia’s Black Bean Guacamole
Ingredients
1 cup black beans, cooked
4 cloves garlic
2 tsp cayenne powder
1 medium red onion, diced small
5-6 tomatoes, diced
2-4 yellow chilies, diced
10 green chilies, roasted and diced
2-4 jalapeño chilies, diced
Fresh lemon juice
6 avocados, cut in chunks
Preparation
Mix everything except avocados, adding chilies, jalapeños, and fresh lemon juice to taste. Add avocados.
